Ingredients

● 1 beef brisket
● Salt
● Black pepper
● Garlic powder
● Paprika
● Yellow mustard or olive oil
● Wood chips or smoking wood

1. Prepare the Brisket

Trim away excess hard fat, leaving a thin layer to help keep the meat moist. Lightly coat the brisket with mustard or olive oil, then season generously with salt, black pepper, garlic powder, and paprika.

2. Cook Low and Slow

Preheat the smoker or grill to around 225–250°F / 107–121°C. Place the brisket over indirect heat and cook slowly with the lid closed. Add smoking wood for extra flavor.

3. Wrap the Brisket

When the outside develops a dark, flavorful bark, wrap the brisket in butcher paper or foil. Continue cooking until the meat becomes very tender and the internal temperature is around 195–205°F / 91–96°C.

4. Let It Rest

Remove the brisket from the grill and let it rest, still wrapped, for at least 30–60 minutes. Resting helps the juices redistribute and keeps the meat tender.

BBQ Tip: Always slice brisket against the grain. Thin slices will be more tender and easier to eat.
