Grilled Chorizo Kabobs with Chimichurri

1. Prepare the Kabobs
Cut the chorizo, peppers, and onions into similar-sized pieces. Thread them onto skewers with the cherry tomatoes, alternating the ingredients for even cooking. Brush lightly with olive oil.
2. Grill Until Golden
Preheat the grill to medium-high heat. Grill the kabobs for around 8–10 minutes, turning occasionally until the sausage is cooked through and the vegetables are tender with lightly charred edges.
